You can go to the MS website, to the update section, and run the update manually, you may even be able to do that from your start menu, at which time you can choose not to install the updates, and confirm that you want them removed from the list.

Partition the HD Before installing an OS.

Right now, using the setup disk, remove all the partitions and decide what you want your partitions to be before you install anything. Set them up, and then install the OS.

I always thought Wing Commander did this pretty well actually, Up/Down was always relative to the nearest capital ship or astrological body, and the radar/sensor suite essentially had forward, above, below, port, starboard, and 'behind you'.

also suggest running a full backup once you've got the system to a stable state, so you don't need to reformat and reinstall everything, simply wipe the partition and restore from backup.
