Haven't thought about this too much, but isn't it just that you're not using the chain rule? Should be:
d/dx (x*f(x)) = f*d\dx(x) + x(df/dx) = f + x(df/fx)

I don't think the balloon would necessarily stay stuck to the roof. The gravity force goes to zero, but the pressure equalizing will cause air flow, which will move the balloon in ways that I can't predict.

Aha. I see where I'm wrong.

I think the easiest way to understand how tacking makes you faster despite the zig zagging is by saying that you will always get the 10 knots downstream velocity from the river regardless of which way your travelling. So any boost you get from tacking will add to that.
