Actually, I'd suggest starting with series 1 (2005, with Christopher Eccleston), then working towards the present. Series 5 (season 1, season Fnarg, the one with Matt Smith) assumes prior knowledge from the previous seasons. After that, you could probably look for selected episodes of the old series...

I'm kind of astounded about the not noticing the actors thing. I never read the comics, so most of the appeal for me was watching Paully Bleeker lay the smackdown on Steve Rogers/Johnny Storm and Clark Kent. Chris Evans might have been the draw for me. Totally worth it, too.
