I don't think those are the sort of songs the thread starter had in mind, unless Infected Mushroom has quite unexpectedly shifted from Psychedelic/Trance to Classical/Fingerstyle guitar recently.

Pretty much anything from the playlist "touhou unplugged/classic (merlin)". Very few exceptions to any lyrics. The only exception I know of is just some latin voices.
Trust me, it's good. I don't really have any link because I'm at school right now (lol, youtube is blocked but not xkcd. Maybe it is because we're a bunch of nerds.) You can google it.

My all time favorite instrumental song, especially because (if not only because) of the ragtime solo in the middle: Dream Theater - Dance of Eternity

As for classical, my personal favorite is Chopin's Etude No. 10, Opus 12 (aka Revolutionary Etude). Favorite interpretation -- Richter. More so than my own. (Which isn't actually saying much, because I can't even play the song through without dropping wrenches into it at least twice.)

Some more Ryuichi Sakamoto. This one's "Bibo No Aozora," used to gorgeous effect in the movie Babel. (Around 4:10, the track segues into a different piece by Gustavo Santaolalla, "Endless Flight." It's also gorgeous. You should listen to both.)

Two pieces of Simon Jeffes' work,Music for a Found Harmonium & Perpetuem Mobile have to be some of my favourate modern (albeit actually nigh on 30 year old) intstrumental music.

NOOOOOO!!! adding a drum beat to classical music is just ridiculous, and makes it sound horrible!!!!

my personal favourite: sinfonietta by Janacek

9 trumpets, 2 bass trumpets, 2 euphoniums, and timpani at the end (plus the large orchestra)

that dance of eternity is interesting. at least they actually write some proper music that doesn't constantly repeat.
I find this kind of music not particularly great because there isn't enough 'colour' in the music from lots of different instruments like in orchestral music.
for some reason I hate all music that has singing in it, unless it is wordless choral stuff like at the end of Holst's The Planets in Neptune.
