So, what's it to be dudes and dudettes? Personally, I like mine to be still trying to limp off when I eat it. Also, what's your favourite cut? Mine's fillet, because it's squishy and not tough/stringy like other cuts.

Medium rare...I like it at least heated through, and with a textured outside, but still nice and pink on the inside. Ah, and I only eat fillet.

Medium rare here. I'd rather any deviation be towards more medium than more rare, but anything above medium is usually not worth eating.

I rarely eat (red) meat, but when I do I don't like it bloody. I did, once, but now I think bloody is... blech... not for me.

Hmm, you skipped "medium" and "medium-well."
In any case, I prefer medium-rare.

rare to medium rare.

also, i'm grilling buffalo steaks tomorrow... is there anything i should to differently? i know they're pretty much like beef, only leaner, i just didnt know if that made a huge difference in cooking method.

Rare-medium-rare for me, but more on the medium-rare side.

The meat should behave the same as beef, but as it is with any kind of leaner meat, the meat will take longer to cook, and will dry out faster. I would recommend marinating it if you can, to give it more moisture (so it doesn't dry out and so it cooks faster), and sear it first on high heat, then lower the heat to cook the inside. The searing should more or less "seal" the meat so the juices don't escape into the grill.

Edit: I should also mention that the standard method of testing the doneness by feeling the "springiness" of the meat will not really work with leaner cuts of meat. The best method for lean cuts is to use a meat thermometer.

Prime rib. Period.

A little bit of creamy horseradish sauce (that I use about every second or third bite) sitting next to a 10-ish ounce prime rib is pure heaven.

Now now, different cuts have their merit.

Fillet is obviously a good cut since it is almost guaranteed to be tender but sirloin, for example, has more flavour, as does rump. You just need to be more sure about the quality of the meat and the skill of the cook.

That said, fillet is my favourite too but I will happily eat the other two mentioned or even a T-Bone in rare circumstances when I know the meat is from a good producer and I can see for myself that it is a good cut, and preferably if my dad cooks it.

Even a less good cut with a nice marinade can be nice sometimes though.

I like it medium - as juicy as you can make it while still making sure all of it has at least changed texture from obviously raw flesh. Pink is good. Red, not so much.

I like mine cooked medium-rare or medium. I like the filets and T-bone cuts myself.

My ex-roommate's now-husband would make up a marinade of lemon juice, Worcestershire sauce, Dale's Steak Seasoning, and beer. Add a bit of salt and pepper. Allow steaks to marinade for a few hours, then cook on the grill. Nom-nom-nom-nom-nom-nom-nom-nom.....

I've used the same marinade myself and it turned out so....excellent.

I don't eat steaks often (cost too much), but if I go out and eat one, I usually go to Longhorn and order the 7 or 9-oz. Flo's Filet. Depends on the appetite.

I like a nice, medium-rare ribeye. Filet is okay, but I prefer the cost/size ratio of ribeye with the minimal change in taste. Plus I prefer the texture. Flank steak is nice for its versitility and relative cheapness when being used for dishes that INCLUDE steak, but aren't necessarily steak.

I like it rare:) But in resturants I usually order medium, cause I will rather have it a tad too much cooked than a tad too little.. But it must be pink to be good. If it's good meat I do like it raw, but I wouldn't have raw meat for dinner.. My bf would..hehe.

I prefer rumpsteak (but it has to be no fat and no tendons) or surloin. I think they have more taste than tenderloin. (Hope I got the english words right.. its tenderloin that is the "best", then surloin then rumpsteak then comes the meat with lots of fat in it..right?)

Mmm I'm having rumpsteak for dinner today, with gratinated potatoes and bernaise sauce... yum <3

Oh me yarm teh cannibalism!

I can never remember one cut from another. It's strange, given the amount of steak I eat that I don't know what's what. I have been able to turn some really cheap beef into really good meals by pretty much ignoring what everyone always says about cooking steaks, though. :)

I like my steak medium rare with sauted onions and mushrooms, and no extra sauces, and my favorite cut by far, regardless of cost, is the ribeye. When I first started making steak for myself, I turned to the internet for help and found this youtube video. I followed it to exactly, and the steak I turned out was the best tasting steak I had on a long time. I just wish now that I had enough money to by myself steak more often.

Also, I feel that anything over medium usually just ruins the steak, making it devoid of flavor. If you prepare or order your steak well done you may as well not bother wasting your money on a piece of steak at all. Just cook yourself some ground beef, because they'll both taste the same.

Rare- I like it to be red on the inside, though I'll eat pink if I have to. If it's not cold in the middle, it's done, and that's that. Although my friends say that it's gross...

Well-done, to the point where any fat is crispy but no more. I hate fat, but it's no fun carefully cutting it all off - much easier to just crunch it up.

When I ate steak, which was about 6 years ago now, my preference was to have it almost burnt. No pink in my steak plz, kthx. If it's bleeding, we have a problem.
My dad, on the other hand, has been known to tell the server "Cut off the horns, wipe it's ass and put it on a plate." Eeuuurgh.

Fillet steak, literally raw, with a pint of Guiness. Unbelievable. If the quality is somewhat lesser, rare will do nicely, especially with a red wine and caramelised onion sauce, and baby boiled potatoes with real Irish butter, and mange-tout. Om nom nom......

I always order rare, but I've never bought a very expensive steak, so I order it anticipating that it will be cooked more than I want it to. I voted rare for that reason, but my tastes are probably closer to medium-rare, I'm actually not sure, I've never had a steak I thought was too rare. I like it to be hot, brown on the outside, red on the inside, chewy and bloody. I'm interested in trying it raw, but I don't know of any places around here I can get that.

Very rare... not quite blue because I like the edges to be sealed and a little crusty, but just warmed in the middle. I'll happily steal raw slices of it when I'm making a stir-fry or casserole, but the good dark red meat, not the slightly pink stuff.

Rare, and on the raw side of that. The one time I've actually had blue, it was a crappy steak sandwich, with tough and stringy meat. I'm not sure how much of that to blame on the meat, and how much to blame on how it was (not) cooked.

The Chili's in town knows how to cook a rare steak, though. Perfect.

I generally order medium rare, because most restaurants won't serve it any rare-r.

I tend to like it between rare and medium rare. Enough to be sealed around the edges and warm. Cold meat is blech.

If I haven't tried the place before and it's got a good reputation I'll order it medium-rare, otherwise if I haven't been there I stick with medium. Different kitchens tend to lean a bit one way or the other with their temperatures.

I like mine simple medium. The inside should be tender and moist, but I don't mind a bit of done-ness on the outside or along the edges. The steakhouse around here is always a step rarer than what you order, so maybe I would be medium-rare most of the time. I'm a big fan of A-1 Steak Sauce. It's almost as expensive as the steak, though.

Steak sauce? You're both heathens. You do the cow a disservice by attempting to mask the taste of it's sweet, sweet meat with such a strong flavor.
