How do you like your eggs?

Breakfast of awesomeness (which I am about to cook right now):
Poached free-range egg, solid white, but liquid yolk placed on a lightly toasted muffin spread with avocado x2.
Top with aioli.
Serve with tomato, steamed vegetables (optional) and your choice of bacon (for manliness) or salmon (for omega 3 goodness).

What are other good ways of preparing these mini packages of protein?

scrambled, but fried and omeletted are close seconds.

Fried is the closest option I could find. You take a large, oval piece of sourdough break, punch a hole out of the middle with a cookie cutter, then grill the sourdough in a small sea of butter and fry the egg in the hole. My mom called it "peek-a-boo toast." I haven't actually made it in years, but it's bar none my favorite way to eat eggs.

I'm told I make a good omelet. They're definitely fun to experiment with. Usually I toss in whatever leftover bits of vegetables and cheese I have and it turns out tasty.

Why hasn't anyone said unfertilized yet?!

Anyway, my personal preference right now is properly scrambled. Not runny scrambled, that's icky. I could probably be swayed upon consumption of a really nice omelette or set of deviled eggs.

Eggs Benedict are where it's at. The yolk running into the craters of the English muffin, (mmm so good), plus Hollandaise and Ham is a divine combination. Probably one of my 5 favorite foods.

I like deviled eggs, but for some reason I am always suspicious of how tasty they are (it might have something to do with the name.) As far as eggs that I make for myself, scrabbled with cheddar, thyme and a little bit of salt. The cheddar is really the linchpin of the whole operation; it makes omelets and scrabbled eggs about 150% better, no matter what.

Scrambled. With 1-2 drops of vanilla extract, with diced ham, pepperoni, linguica, beef hotlink, and sausage mixed in. Then tossed into a burrito with green/yellow/red/orange peppers and shredded lettuce. YES.

Ah, eggs.

Coarsely scrambled with whatever bits of vegetable and cheese are handy.

Finely scrambled, with a bit of basil and parmesan, on toast.

Fried on both sides, in sandwiches.

Fried on one side, with breakfast meats.

In a curry, hard-boiled.

Baked onto a pizza, with a sprinkle of pepper.

I eat a lot of eggs.

Also, I think I wrote a poem.

I can't pick just one! I like eggs. But I do not like any part of my egg to be runny. Meaning, no soft-boiled, no over easy, hard poached only, etc. Some favorites include:

Eggs Benedict with grilled veggies instead of pig parts.

Omelets. Cheese, spinach, mushrooms, avocados, smoked salmon, onions, etc. are all acceptable fillings. Again, no pig parts. Leftover spaghetti sauce that has lots of chunky veggies and/or ground turkey in it is a surprisingly good omelet filling.

Egg in a Basket - pretty much exactly what Clintonius described.

Devilled eggs and egg salad sandwiches are win.

Poached eggs on toast and fried egg sandwiches (on bagels, with cream cheese and sliced tomato) are most acceptable forms of breakfast.

Well, I chose poached, since I reaaaaaally do like a poached egg on toast.

But scrambled with cheese. And a fried egg in a roll, with tomato ketchup...just runny enough to soak into the bread... drools
I also have a strange thing I used to do with a boiled egg where you stick it in a cup [helps if it's not completely hard boiled, have to do it when it's still warm] mash it up, add a little chicken seasoning [which the company no longer make, it had paprika, and a few other herby things in it] add salad cream, a squeeze of ketchup, and bread crumbs. Then you mix it all together, and then eat it with cottage cheese. Strange. But good.

Another strange thing, I was sitting eating my first fried egg roll in ages yesterday and thought there really should be an "Egg" thread on here. And here it is! :D

My wife (and daughters) love "Messy Eggs".

Messy Eggs
-----------

In a cast-iron skillet, combine the following:

Butter
Diced red peppers
Diced green peppers
Diced red onions
Diced green onions
Garlic
More Garlic
Dash of worsteshire
Dash of hot sauce
Whatever grated cheese you have laying around

Blast it on high until things start to crisp. Reduce heat. Add 3-6 eggs. Scramble like crazy. Serve on toast.

I love soft boiled eggs with strips of toast with butter (soldiers as my mum used to say), and poached eggs on fresh spinach leaves with grated mature cheddar on a white baguette, simple yummy..

I mainly take mine scrambled, although I wouldn't say no to an omelette now and then.

I love devilled eggs, although the picture above isn't what I'm used to. I'm used to the yolks being mixed with mustard, pickle relish, and chopped onion, placed back in their holes, and then sprinkled with a little paprika for color and flavor. OMNOMNOMNOMNOMNOMNOMNOMNOM.....

I remember when I was a kid, my mom's Physics professor invited his students and their families to his farm for a cook-out. Someone brought a large tray of devilled eggs, and I nearly made myself sick from eating about a third of the tray. My parents and my grandma had to get onto me and made me leave some for others.

i went with fried, although hard-boiled would have been my second choice. you can hard-boil them and throw them in a lunchbox for work/school later.

I love Egg in the basket. Cracker Barrel sells it as one of their breakfast items. I also love scrambled egg sandwiches.

Eggs fried in sage butter.

Get some fresh sage, heat up the frying pan, put some butter in there, and throw the sage in the butter. As the butter sizzles, the sage flavours it. When you then fry the egg in the butter, the eggs pick up the sage. Delicious!

Secondary answer: organic and free range. The chickens are happy, and the eggs are much, much better.

Usually at a restaurant I order my eggs over hard. Before I was diagnosed Gluten Intolerant I used to have them over easy and dip my toast--now I get them over hard cuz I can't dip them. It's mostly habit though.

At home I usually eat omelettes.

I like my eggs fried, scrambled, omeleted, deviled, and in scotch form. I need to make scotch eggs again. I only had them twice.

I don't believe it is. Though there's plenty of UK folk here who can verify. Now, granted, I'm using Alan Moore's ranting about the V for Vendetta movie specifically against that phrase, and I doubt he speaks for all Britains.


Myself.. Fried, over hard. Slightly burned is nice. I like it when my eggs can sometimes double as self-defense weaponry.

Over-medium.. Sunnyside up, some salt+pepper, then flipped over, salt+pepper, wait for them to get a little crispy on the bottom. If you do it right there still is a little bit or runny yolk left to scoop up with buttered toast.

I just like eggs, scrambled is one of my favourites, though poached, soft boiled, deviled and omelette (huh? my firefox dictionary doesn't recognise that word) are all doubleplus good.

I've heard the term eggy in the basket used in that context several times by different people...so I think we can take it as an accepted term for the described deliciousness.

Yes I've heard toad in the hole too--there are several regional terms for the same dish I think. Toad in the hole is actually technically sausages cooked in yorkshire pudding though.http://en.wikipedia.org/wiki/Toad_in_the_hole

...am I the only one who uses the term "overeasy"? That's how I prefer my eggs. Closest thing I could pick was fried, I suppose.

Although, there're several different ways I like my eggs; overeasy/fried is further on down the list, but the top two for me are conditional on what goes with it. My list:

1) scrambled with paratha

2) omelette with khichuri (I use a much different recipe than what I linked here, though)

3) overeasy, on either toast or fried tortilla

4) hard-boiled and sliced open in egg curry
