Sautéed onion, garlic, carrots, and sugar pea pods over rice, cooked in dashi, with shiitake, onion, garlic, preserved chili1, and pepper corns; cod on the side, browned in oil and such left over from the vegetables.

...with carrot & serrano sauerkraut as a side, it will be lunch tomorrow, as well.

1I just slice them, mash them up a bit, and top off a small jar...I'm not sure what it should rightly be called.

Today I made spinach soup, broccoli pie and pesto sauce. Froze almost all of that, for use in various lunches at work.

Oh, I just remembered, I also made brownies. They turned out very well - I added some crushed walnuts and peanuts, and amaretto liquor.

Spaghetti carbonara, using my brothers home-cured bacon. The sauce is a bit loose, but it's still tasty.

This evening I made a spicy (cumin seeds and chilli) lentil and carrot soup to take to work for lunch this week. It turned out very well. :) I think next time i'm going to add some coconut milk to make it extra creamy.

Whole wheat and oat bran bread (I have a bunch of oat bran to use up). The oat bran gives a kind of sweetness that is actually pretty good.

Tonkotsu style broth, waiting for noodles and whatever else.

A few days ago I wanted to make a frittata. I took a sweet potato, thinly sliced it and fried it on a low flame. Added some onion and garlic, salt and pepper. Then I had an idea - instead of using plain-old eggs, I'll mix some self-raising flour in it (not too much - I used two eggs and about 3-4 tablespoons of it, enough to make it similar to a pancake batter). Then I poured it on top, covered the pan and lowered the flame. 10 minutes later I had a sort of pancake with sweet potato and onions in it. It was very good. Will cook again.

Today I made:
Homemade humus (turned out OK, not great, a bit too much lemon, cumin and water).
Potatoes in the oven with purple onions and a gravy made of mayo, mustard, garlic, fresh chili and honey.
Right now I'm eating strawberries with balsamic vinegar and date honey and it's wonderful.

The last two and a half days (counting a morning of soaking): bean, pea, and grain soup (red mung beans, chickpeas, green peas, yellow peas, barley, pearl barley, brown rice)

Today I spatchcocked a chicken for roasting, per PAstrychef's recommendation. Interesting technique. I see how it's good for grilling, and probably cooks the bird a bit more quickly, but I'm not sure I would do it as a rule for plain roasting. The skin of the chicken wasn't as crispy as I'm used to getting, which might not have been the fault of the bird prep. The keel bone was a bit of a pain to remove, but I'll do it better next time, I think. Still working on it. Served up a simple spinach salad and some roast vegetables alongside.

Admittedly this was yesterday but: Cottage pie with various roast veg (sweet potato, red onion, beetroot, carrot) and yorkshire puddings. Then a victoria sponge with homemade buttercream :)

I made Jambalaya with kids at work...that was yesterday though. Was a bit too saucy--gonna have to twerk that recipe some.

I've made jambalaya with lots of things but never with kids-were they tasty? Last night it was maple-soy glazed salmon, maftoul (the big couscous) and sauteed zucchini and yellow squash with onion. It was great having a real meal and real food for lunch. The night before one of the roommates made pot-roast he served out the slab of beef and some baked spuds. He didn't even have any carrots cooked in the pot, much less any mushrooms.
(He then proceeded to eat well over a pound of beef-it was scary to watch)

Strange bread. With some whole wheat sitting in the cupboard, making me nervous for having not used it (bugs, y'know), I ground a good bit with a coffee grinder, and made dough. I let it rise twice in the fridge, then three times out of it (had other things to do, then had free cold pizza for dinner), then proceeded to forget about until this morning. So by then, it had a good mix of jar yeast and wild yeast (you could smell it), and more than a bit of alcohol.

Well, all that, combined with whatever weird grind said coffee grinder made (electric burr grinder), gave a loaf of bread that's not quite sourdough, and has the squishiness, and overall texture, of a good fruit-filled muffin. It's just plain strange.

Also, Wednesday: jambalaya.

I made lasagna. Instead of béchamel sauce I used cottage cheese and a couple of eggs. I also used whole-wheat pasta. Doesn't seem to make such a difference.
I also made the potato thing again from a couple of weeks back, for a family gathering tomorrow.

Doesn't compare to everything else in this thread, but I just made bacon, eggs, and toast. You must understand this is a big accomplishment for me though. I have cooked something other than Ramen about 10 times in my life... And I've never tried cooking Bacon..

But yea, it was delicious.. The eggs were a tiny bit weird(I cooked them too quickly) but the bacon was awesome. It was that amazing Crunchy, yet doesn't chip your teeth way... I really need to cook more. lol

Don't be ashamed of yourself! First, sometimes the simplest things are the tastiest. Second, we all started with cooking eggs and only later started doing more complicated stuff.

Cottage cheese is a great idea. I made my first ever lasagna today ^^ Well vegetarian lasagna, since I'm vegetarian. It was very very yummy! The only down side (very minor) was I used the dried pasta sheets and I put them right against the edge of the dish and when they expanded slightly the edges got pushed up :P

A project off and on over the last few days-
a big ass pot of cassoulet. I had some duck confit I made a while ago, and I added some smoked bacon, some pork roast and some lovey garlicky sausage made by a local butcher. Topped with bread crumbs and parsley drizzled with duck fat.
Luckily I invited people for dinner.
Also a nice batch of shrimp and grits from an Cooks Illustrated recipe. I remembered how spice-averse they are and increased the chipotle in adobo from 1 teaspoon to one whole pepper, minced. Made enough for 6 servings.
Baked off some almond cookie dough from the freezer and topped them with chocolate glaze left from a pound-cake taken to work.
Tomorrow will be another cake for work-they get one every other Monday. I think banana.

I might have to kill you if you were my coworker, PAstrychef.

Bakemaster and I have not been doing much cooking lately. With me working full time and him in school full time now, we're tired a lot. But last week we made chicken that was marinated in a yogurt-coconut milk-curry-lime-honey-chili oil marinade of my own creation, and we grilled it after two days. It was REALLY good. Served with brown rice, grilled vegetables, and spinach salad. I brought the leftovers to work. Also last week I made a veggie quiche, topped with tomato slices. Very tasty. Today my sister is making salmon-avocado crepes.

I made some excellent sweet potato soup with ginger and garlic on Friday. It came out so thick and lovely I didn't even have to add cream, which was nice.
On Saturday I made myself a nice breakfast - some toast, cottage cheese, a cucumber and tomato, two eggs sunny-side up, some freshly squeezed orange juice. Nothing special, but sometimes it's nice to have simple stuff.
Today I'll make tarte tatin, after a long time not preparing it. It's my dad's favorite cake that I make and this is the first time I've done it since they left for their trip, about ten months ago (and came back a month ago).

Yesterday I made pizza :) Plain white base, with passata, chicken red onions, bell peppers, sweetcorn and cheese. Om nom nom. Also, more popcorn, this time covered in butter.

Today I made a Sazerac. Then I made foil-baked red mullet with green beans and dill-buttered potatoes. Then I made everything soup, with a whole bunch of ingredients. Then I made cauliflower soup, with just the one ingredient. Then I made drop scones with sour cream, smoked salmon and dill.

I also had some toasted muffins with peanut butter, and some St Agur with pane toscano and home-made kumquat marmalade, and two pots of pu-erh tea, but I don't really count those as cooking.

Foodest. Day. Evar.

Braised pork, loosely Vietnamese-inspired. Nicely browned, and slowly cooked with onions, ginger, garlic, jalapenos, fish sauce, brown sugar and tamarind. The sauce ended up a little strong, but the meat was tender enough to eat with a spoon.

Dammit! I have to make Jambalaya, now. I've had a bottle of shiraz pouting at me for a few weeks, anyway...

P.S. An experimental batch, as gravy+rice, with wine, bell pepper, and bacon in the rice, and no bell pepper in the gravy portion.
...and some pasta salad with bacon, in cream cheese and milk sauce (I'm not a big fan of mayo).

Today I made liver and eggplant, and had it with some red wine whilst watching Top Gear. It was lovely :)
