Based on my limited knowledge of anatomy texts, I assumed that "plates" basically has the same meaning as "figure" (Figure A, etc.) in other texts (there's also the rather obvious "photographic plates").

The joke is made more clear by the alt-text. It's not exactly a joke, as such - more of a humorous observation regarding the way anatomy photos, particularly the ones on wikipedia, often look a bit like someone just climbed up on a table and got their partner to start snapping away happily.
He has taken that idea and extrapolated it to present a scenario involving two people producing anatomy photos in the middle of a TGI Friday's.
I would also like to point out that human nudity ≠ porn... not in every case, of course, but still. It really depends on the context.
And if looking at this particular comic at work has a better chance of getting you fired than looking at xkcd (or any other webcomic) at work in general... well, your workplace is pretty odd.
