I wish I had a picture, but I found a recipe for onion ring chicken parmesean. I made said recipe, and it turned out good, but I felt as if it was missing something.

The following is what I can remember from said recipe:

3 oz Parmesean Cheese
3.5 oz Crushed french fried onions
some bread crumbs
1 tsp paprika
.5 tsp salt
dash of pepper

That's the breading mixture.

Then you dip your chicken in an egg/milk mixture (1 tbsp milk per egg), and you dip it in the breading mixture.

After you put it in the pan, you pour some melted butter on top.

The flavor was good, but it just needed something. I was considering maybe pouring some beer (Beck's) on after the butter. Any suggestions?

If you want to use beer, put it in the milk/egg mix.
You might increase the pepper, add some other spices-paprika, chili powder, mustard powder, etc.
You could add some worchestershire sauce to the milk/egg mix.
Try just increasing the salt a bit.

This weekend I made a potato and cream dish to die for. Today I'm making everything in the house that needs to be used up before we go on holiday! This will include, but will not be limited to, LOTS of oven roasted veg and a lamb and buttermilk stew. Portions will be frozen for easy eatings in the new year.

Try using Italian bread crumbs instead of unflavored bread crumbs. Also, stir in 1 to 2 teaspoons of poultry seasoning into the breading mix. It's a premix spice combination of thyme, sage, marjoram, rosemary, black pepper, and nutmeg.

Ztarain's jambalya pasta mix, with added veggies (lack of sleep -> lazy food). I haven't used any such things in quite awhile (5+ years, IIRC), and it's amazing how not-so-good it is, even after adding over 1.5lb total of onions, jalapeno, carrots, and celery. I won't need any more salt for a couple days...

Oooh those tortillas sound awesome.

Yesterday was my bible study group's Christmas dinner. I was in charge of puds, and I made a homemade secret santa present, and I had to help my friend who was in charge of veg but hurt her finger and wasn't allowed to use that hand. So, yesterday I made:
  • Nigella's Christmas bonbons.
    Leftover Christmas cake or pudding, crumbled and mixed with golden syrup, sherry, and melted dark chocolate; rolled into truffles and decorated with white chocolate and red and green cherries arranged to look like sprigs of holly. The whole effect looks like adorable miniature Christmas puddings. They are so easy (except the time consuming decoration), and were delicious.
  • Apple tartlets with a caramel cream sauce.
  • Chocolate butter fudge
  • Oven roast vegetables with feta

It, and the whole dinner, was delicious. The kitchen was a total nightmare, though; I'm still washing dishes this morning!

I made the same chicken parmesean as last time. Only this time, I added some Bailey's and a little more pepper. It seems as if they cancelled out each other's flavor. I'll try more variations and post results.

Today:
Two eggs over-easy with a slice of bacon. I wanted the grease more than the bacon.
Pickled vegetable salad (cabbage, carrots, green onion, jalapeno, and a bit of salt, with a bowl of beans for weight).

A Southwest style leftover mash up- corn, black beans and shredded sweet potato sauteed with onion and leftover roast beef, seasoned with cumin, dried cilantro and chili powder. My sister in law really doesn't have much in the way of spices. Not as popular as the lo-mein from Tuesday, but I'll eat it for breakfast foe the next couple of days.

Cheap white rice. Boiled until a bit sticky in a pot on the stove. (I don't like measuring things. >.>)

Oh, and I added (to what became about 2 cups finished rice) one pinch each of cumin seed, ground cardamom, ground nutmeg, dried mint, and some butter. The result was a delightfully intriguing flavour, no one spice or herb identifiable unless I bit into a cumin seed. I just might do that combo again one day.

Chinese dessert soup thing. This might go better in the dumpling thread...

I don't know what they're called but basically it was this:

You make a broth with water, this sugar stick thing and slices of ginger, bring it to a good rolling boil while you prepare the dumplings.

The dumpling dough is glutinous rice flour, a bit of oil and enough water to make a dough the right consistency. You make balls with peanutbutter, sesame seeds and sugar in the middle.

Then you cook them in the broth till they float. So delicious!

I made something sort of like a deconstructed taco salad (with soy-catash, black beans and meatless crumbly-bits). I think perhaps PAstrychef and I really are tuned in to some similar cosmic wavelength. Or is there something about mid-December that cries for southwest cuisine?

I made (with extensive assistance from Mr. Bakerstein) a huge ass-cake. Chocolate buttermilk, 3 layers, frosted and topped with pecans. Roughly 15k calories. Tomorrow, it will be auctioned for the benefit of homeless teens.

Today I made mashed potatoes and my first ever meat loaf. I used minced moose (which I got from my boyfriend's father) and added some feta cheese and lots of spices and herbs. Awesome, if not a bit on the salty side, but awesome nevertheless. Being so excited about the meat loaf, I didn't check whether the potatoes where fully cooked before I mashed them, so the mash's a bit strange, but edible.

I made some rice today to go with the Chinese food I ordered. I put a whole head of garlic in 1.5 cups of (uncooked) rice! I was sure it was going to be a lot but actually it's not as noticeable as I would think.

I then craved a dessert but had almost nothing at home. So I made a small batch of butter-cookies and topped them off with a sort of nutella-like paste made from hazelnuts, some butter and dark chocolate.

I live a few blocks from the most DELICIOUS breakfast place that gives me ideas like the above. It's slightly problematic (though not as indulgent as their banana bread french toast or cookie dough pancakes).

Chocolate souffles with help from the niece. Mostly she wanted to eat the chocolate at every stage, and do none of the work. Tuesday night dinners are going to be challenge if she can't get her head around the idea is that I know she doesn't know how to cook at the moment, but I am eager to teach her some basic stuff. Since her response to not being perfect at any thing the first time she tries it is to cry and whine I'm going to have to work hard to contain my being irked at this behavior.

Made a massive raspberry trifle for early Christmas.Tasted amazing but the cream was the color of fairy floss since I added some raspberries to it to flavor it. Still taste is better more important than looks.

Well it's not really food, but a drink mix my boyfriend makes me when I'm dead in the morning and need a pick-me-up. He calls it "Mudders' Milk" 'cause it's so strong, but it's a lovely eye-opening combo of instant coffee powder, hot chocolate and more sugar. I would probably eat the powder straight if it weren't so dry, it's that good.

Sounds like an instant mocha. They might actually sell that, but they probably include dried milk, which would make it taste a bit off.

Found the solution to cooking with the niece. Ask her if she wants to help, listen to her say no as she plays cooking game on the wii, cook happily by myself. Although everyone did like the chicken. They even liked the wheat pilaf (from a box).
Next week it's milk-braisded pork roast with lemon sage and garlic. Maybe spatezle to go with. Maybe the dill dumplings from Enchanted Broccoli Forest.

Chicken pseudo-teriyaki. Basically, roughly shredded chicken, finished in a hot pan with soy, mirin, sugar, ginger, lemon juice and chili-garlic sauce.

I just looked up milk-braised pork. What. I'm going to have to try that.

Come to think of it, it's basically a savory version of rabri, a rustic Indian sweet. But, you know, with pork.

Changing up the aromatics could be very interesting-I know a lamb curry cooked in milk with cinnamon and green cardamom pods that's very nice.

Yesterday I made:
Double-colored chocolate chip cookies (one half is white with dark chocolate chips, the other half is brown with white chocolate chips). Om nom nom.
Vanilla extract. It will only be ready in a couple of months, really. Basically lots of vanilla beans, split and grains scraped out, placed in a lot of vodka, stirred once a day for two months.
Some broccoli in the oven.
A ramen omelette sort of thing (ramen, eggs, green onions, soy sauce, sesame oil).

So I've been getting a peanut butter and banana on whole wheat sandwich as part of my lunch. I haven't eaten them the few days, so this morning I aim to dip them in egg-and-milk, ala french toast and fry them up. How bad could it be?
(my sister in law makes the sandwiches for me and my brother. The ones I don't get to I put back in the fridge.)

They were pretty tasty. I think a longer soak would have been better, and bacon would have been perfect, but there was no bacon to be had. :cry:

Cocktail sauce, made with freshly-grated horseradish.

Pork loin, seared then roasted in a cast iron skillet, with a rub of old bay, rosemary, basil, salt, and pepper, and with coriander and stuff garlic stuffed into it. As a side, onions and cabbage, cooked in the hot skillet that just came out of the oven, with a light sauce made of a little beer (deglazing as an excuse to try a new beer out :)), honey, and worcestershire sauce.
