Beat the freaking crap out of a cucco. (easier said than done....try to trap it)
Persistence is key.
Now once you're controlling it (lasts for several seconds), you can do whatever link can do, if he had not items or attacks. i.e. run around like a headless chicken. Whichever direction you want. I think you can even jump (slightly).
It has been a while since I have done it.
